Mundane Monday

In honor of National Cat Day, I had a very relaxing and lazy day. I watched Halloween movies all day but I did do some baking this morning and am going to make (my own!) vegetarian chili for dinner tonight. Beans, tomatoes, peppers, spices. Das it!

Last week, I ended up making chicken tacos using the green enchilada sauce and putting it in the slow cooker. The sauce didn’t leave the chicken with much taste so salsa would have been the better option here. The slow cooker pork was definitely a hit! I will 100% be making that again. We had leftovers the following night and I ended up working late on Friday so Paul made some enchiladas, which are my favorite! 🙂 He’s such a great cook!

I did try making chicken and dumplings with the leftover biscuit dough last night. The soup part was very good but throwing the raw biscuit dough in the soup was not a good idea. Paul ended up helping me out and we figured the dough pieces were too big and wet. The soup consisted of chicken broth, cooked chicken, frozen mixed vegetables, salt, pepper, thyme and a bay leaf. I also made a flour-water mixture on the side and added that to the soup to thicken it up. In order to try to cook the dough fully, the soup was on the stove-top for about an hour but it doesn’t really need that much time. I used Katie Lee’s recipe as a reference and will use that one for the dumplings next time.

My dad’s birthday is today and he would have been 76! Wowza! Every year Paul and I celebrate by having a piece of cake for him. I didn’t want to make a huge cake so I searched for recipes that were only for two people. I found this one and made it this morning.

I made the icing from the recipe as well but mine was a little runny. Oops! Once the cakes cooled, I topped them with a little bit of icing and some sprinkles. It is a special occasion after all!

It’s also National Oatmeal Day so I decided to make some healthy 3-ingredient cookies. I used a cup of quick oats, a banana and 2 tablespoons peanut butter. I ground up the oats until they were a flour consistency and then blended everything together. I baked them for 350 degrees for about 15 minutes, turning once. They actually taste pretty good and are only about 100 calories each! You can make up your own variations and also add chocolate chips, raisins or flax seeds.

Dinners this week include turkey meat sauce with zoodles (which I make often-without a recipe!) and a Tuscan chicken recipe I found. I’ll let you know how they turn out!
